Dairy-Free Chicken Wraps

Easy lunch wraps with dairy-free fillings and simple seasoning, perfect for quick lunches or packed lunches.

Ingredients
  

  • 2 cooked chicken breasts sliced
  • 4 wraps
  • 1 little gem lettuce shredded
  • 1 cucumber sliced
  • 2 tomatoes sliced
  • 4 tbsp egg-free mayonnaise
  • 1 tsp lemon juice
  • Salt and pepper to taste

Method
 

  1. In a small bowl, mix the egg-free mayonnaise with the lemon juice.
  2. Lay out the wraps and spread a spoonful of the mayonnaise mixture onto each one.
  3. Add the shredded lettuce, sliced cucumber, sliced tomatoes, and cooked chicken.
  4. Season lightly with salt and pepper.
  5. Roll the wraps up tightly, tucking in the sides as you go.
  6. Serve straight away, or wrap and chill until needed.

Notes

  • Use gluten-free wraps if needed for your dietary requirements.
  • Grated carrot or sliced avocado also work well in these wraps.
  • These are best made fresh, but can be prepared a little ahead of time and kept chilled.
