Preheat the oven to 190°C / 170°C fan / gas mark 5.
Heat the olive oil in a large ovenproof casserole pan or frying pan.
Add the sausages and cook for 5–6 minutes until browned on all sides, then remove and set aside.
In the same pan, add the onion, carrots, red pepper, and garlic, then cook for 5 minutes until beginning to soften.
Stir in the chopped tomatoes, tomato purée, stock, oregano, and paprika.
Season lightly with salt and pepper.
Return the sausages to the pan and spoon some of the sauce over the top.
Transfer to the oven and bake for 30 minutes until the sausages are cooked through and the sauce has thickened slightly.
Serve warm with potatoes, rice, or gluten-free bread if liked.
