Dairy-Free Hummus and Veg Pinwheels

Easy lunchbox or picnic pinwheels made with hummus and crunchy vegetables, perfect for a simple lunch or snack.

Ingredients
  

  • 2 wraps
  • 4 tbsp hummus
  • 1 small carrot grated
  • 1/4 cucumber finely sliced or grated
  • 1/2 red pepper finely sliced
  • Handful of lettuce shredded

Method
 

  1. Lay the wraps out flat on a board or clean work surface.
  2. Spread the hummus evenly over both wraps.
  3. Scatter the grated carrot, cucumber, red pepper, and shredded lettuce over the hummus.
  4. Roll each wrap up tightly.
  5. Slice each wrap into small rounds to make pinwheels.
  6. Serve straight away, or chill until needed.

Notes

  • These work well in lunchboxes, picnic boxes, or as an easy snack.
  • Slice just before serving if you want them to look neater and stay fresher.
