Dairy-Free Egg-Free Gluten-Free Sausage Casserole

A warming sausage casserole with vegetables and a rich tomato sauce, perfect for an easy family dinner.

Ingredients
  

  • 8 gluten-free sausages
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 1 red pepper chopped
  • 2 cloves garlic crushed
  • 400 g tin chopped tomatoes
  • 2 tbsp tomato purée
  • 300 ml gluten-free vegetable or chicken stock
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 190°C / 170°C fan / gas mark 5.
  2. Heat the olive oil in a large ovenproof casserole pan or frying pan.
  3. Add the sausages and cook for 5–6 minutes until browned on all sides, then remove and set aside.
  4. In the same pan, add the onion, carrots, red pepper, and garlic, then cook for 5 minutes until beginning to soften.
  5. Stir in the chopped tomatoes, tomato purée, stock, oregano, and paprika.
  6. Season lightly with salt and pepper.
  7. Return the sausages to the pan and spoon some of the sauce over the top.
  8. Transfer to the oven and bake for 30 minutes until the sausages are cooked through and the sauce has thickened slightly.
  9. Serve warm with potatoes, rice, or gluten-free bread if liked.

Notes

  • This recipe works well as a make-ahead family dinner and leftovers can be reheated thoroughly.
  • You can add peas or extra peppers if you want more vegetables.
