Dairy-Free Egg-Free Gluten-Free Sausage Casserole
A warming sausage casserole with vegetables and a rich tomato sauce, perfect for an easy family dinner.
Ingredients
Method
- Preheat the oven to 190°C / 170°C fan / gas mark 5.
- Heat the olive oil in a large ovenproof casserole pan or frying pan.
- Add the sausages and cook for 5–6 minutes until browned on all sides, then remove and set aside.
- In the same pan, add the onion, carrots, red pepper, and garlic, then cook for 5 minutes until beginning to soften.
- Stir in the chopped tomatoes, tomato purée, stock, oregano, and paprika.
- Season lightly with salt and pepper.
- Return the sausages to the pan and spoon some of the sauce over the top.
- Transfer to the oven and bake for 30 minutes until the sausages are cooked through and the sauce has thickened slightly.
- Serve warm with potatoes, rice, or gluten-free bread if liked.
Notes
- Check that your sausages and stock are suitable for your own allergy or dietary needs.
- This recipe works well as a make-ahead family dinner and leftovers can be reheated thoroughly.
- You can add peas or extra peppers if you want more vegetables.
