Dairy-Free Egg-Free Pancake Bites

Mini pancake bites that are soft, easy to make, and perfect for lunchboxes, breakfast, or toddler snacks.

Ingredients
  

  • 150 g plain flour
  • 2 tsp baking powder
  • 1 tbsp caster sugar
  • 1/2 tsp ground cinnamon
  • 180 ml dairy-free milk
  • 1 ripe banana mashed
  • 1 tsp vanilla extract
  • 1 tbsp vegetable oil
  • A little extra oil for greasing
  • Optional: blueberries or small dairy-free chocolate chips

Method
 

  1. Preheat the oven to 180°C / 160°C fan / gas mark 4 and lightly grease a mini muffin tin.
  2. In a large bowl, mix together the flour, baking powder, caster sugar, and cinnamon.
  3. In a separate bowl or jug, whisk together the dairy-free milk, mashed banana, vanilla extract, and vegetable oil.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in a few blueberries or dairy-free chocolate chips if using.
  6. Spoon the mixture evenly into the mini muffin tin, filling each hole about three-quarters full.
  7. Bake for 12–15 minutes until risen, lightly golden, and cooked through.
  8. Leave to cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • These work well for lunchboxes, toddler snacks, or a quick breakfast.
  • Use very ripe banana for the best natural sweetness.
  • You can keep them plain or add a few blueberries or dairy-free chocolate chips for variety.
  • They can be frozen once cooled and defrosted as needed.
