Gluten-Free Banana Bread

A soft, naturally sweet gluten-free and egg-free banana bread that is perfect for lunchboxes or a cosy afternoon treat. Made with simple ingredients, this easy loaf has all the classic banana flavour and moist texture, without the gluten or eggs.

Ingredients
  

  • 3 very ripe bananas
  • 75 ml vegetable oil or dairy-free butter, melted
  • 200 g gluten-free self-raising flour
  • 100 g brown sugar
  • 1 tsp baking powder 1 tsp cinnamon
  • 2 tbsp ground flaxseed mixed with 6 tbsp water (as an egg replacer)
  • 1 tsp Cinnamon

Method
 

  1. Heat the oven to 180°C and line a loaf tin.
  2. Mash the bananas in a large bowl, then mix with the oil and sugar.
  3. Stir in the gluten-free self-raising flour, baking powder, cinnamon, and flaxseed mixture until fully combined.
  4. Pour the mixture into the prepared loaf tin.
  5. Bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
  6. Leave to cool before slicing.

Notes

  • Add dairy-free chocolate chips or blueberries if suitable for your dietary needs.
  • This freezes well; slice before freezing for convenience.
