A soft, naturally sweet gluten-free and egg-free banana bread that is perfect for lunchboxes or a cosy afternoon treat. Made with simple ingredients, this easy loaf has all the classic banana flavour and moist texture, without the gluten or eggs.

- Heat the oven to 180°C and line a loaf tin.
- Mash the bananas in a large bowl, then mix with the oil and sugar.
- Stir in the gluten-free self-raising flour, baking powder, cinnamon, and flaxseed mixture until fully combined.
- Pour the mixture into the prepared loaf tin.
- Bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
- Leave to cool before slicing.
Notes
- Add dairy-free chocolate chips or blueberries if suitable for your dietary needs.
- This freezes well; slice before freezing for convenience.
