- Heat the olive oil in a large pan and gently soften the onion, carrots, and garlic.
- Add the beef mince and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the tomato purée and gluten-free flour.
- Pour in the gluten-free beef stock and add the thyme and Worcestershire sauce.
- Stir well and simmer for 20 minutes, until the filling has thickened.
- Meanwhile, boil the potatoes in a pan of salted water until tender, then drain well.
- Mash the potatoes with the dairy-free milk and dairy-free butter until smooth. Season to taste.
- Spoon the beef filling into an ovenproof dish and spread the mashed potato over the top.
- Bake at 180°C for 20 minutes, until the top is lightly golden and the filling is bubbling.
