Dairy-Free Lentil Soup

A filling lentil soup with vegetables and gentle seasoning, perfect for a simple lunch or light dinner.

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 2 carrots diced
  • 2 cloves garlic crushed
  • 1 stick celery diced
  • 150 g red lentils
  • 1 litre vegetable stock
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • Salt and pepper to taste
  • Fresh parsley chopped, to serve (optional)

Method
 

  1. 1 tbsp olive oil

  6. 150 g red lentils
  7. 1 litre vegetable stock
  8. 1 tsp ground cumin
  9. 1/2 tsp ground turmeric
  10. Salt and pepper, to taste
  11. Fresh parsley, chopped, to serve (optional)

Notes

  • Red lentils break down well and help create a naturally thick soup.
  • Add a little extra stock or water if you prefer a thinner consistency.
