- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 cloves garlic, crushed
- 1 stick celery, diced
- 150 g red lentils
- 1 litre vegetable stock
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- Salt and pepper, to taste
- Fresh parsley, chopped, to serve (optional)
Notes
- Red lentils break down well and help create a naturally thick soup.
- Add a little extra stock or water if you prefer a thinner consistency.
- Check that your stock is suitable for your own allergy or dietary needs.
