Dairy-Free Egg-Free Chocolate Chip Cookies

Soft cookies packed with dairy-free chocolate chips, perfect for lunchboxes, snacks, or an easy homemade treat.

Ingredients
  

  • 225 g plain flour
  • 100 g light brown sugar
  • 75 g caster sugar
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 120 ml vegetable oil
  • 60 ml dairy-free milk
  • 1 tsp vanilla extract
  • 100 g dairy-free chocolate chips

Method
 

  1. Preheat the oven to 180°C / 160°C fan / gas mark 4 and line a baking tray with baking paper.
  2. In a large bowl, mix together the flour, light brown sugar, caster sugar, baking powder, bicarbonate of soda, and salt.
  3. Add the vegetable oil, dairy-free milk, and vanilla extract, then stir until a soft cookie dough forms.
  4. Fold in the dairy-free chocolate chips.
  5. Roll the dough into 12 even balls and place them on the prepared tray, leaving space between each one.
  6. Flatten each ball slightly with the back of a spoon.
  7. Bake for 10–12 minutes until the edges are lightly golden.
  8. Leave the cookies to cool on the tray for a few minutes before transferring to a wire rack.

Notes

  • The cookies will still feel soft when they come out of the oven but will firm up as they cool.
  • For a slightly chewier texture, chill the dough for 20 minutes before baking.
  • Store in an airtight container for up to 3 days.
