Ingredients
Method
- Preheat the oven to 180°C / 160°C fan / gas mark 4 and line a baking tray with baking paper.
- In a large bowl, mix together the flour, light brown sugar, caster sugar, baking powder, bicarbonate of soda, and salt.
- Add the vegetable oil, dairy-free milk, and vanilla extract, then stir until a soft cookie dough forms.
- Fold in the dairy-free chocolate chips.
- Roll the dough into 12 even balls and place them on the prepared tray, leaving space between each one.
- Flatten each ball slightly with the back of a spoon.
- Bake for 10–12 minutes until the edges are lightly golden.
- Leave the cookies to cool on the tray for a few minutes before transferring to a wire rack.
Notes
- The cookies will still feel soft when they come out of the oven but will firm up as they cool.
- For a slightly chewier texture, chill the dough for 20 minutes before baking.
- Store in an airtight container for up to 3 days.
