Dairy-Free Chocolate Traybake

A simple chocolate bake that works well for parties, lunchboxes, or an easy family treat.

Ingredients
  

  • 200 g plain flour
  • 50 g cocoa powder
  • 150 g light brown sugar
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 250 ml dairy-free milk
  • 100 ml vegetable oil
  • 1 tsp vanilla extract
  • 100 g dairy-free chocolate chips optional

Method
 

  1. Preheat the oven to 180°C / 160°C fan / gas mark 4 and line a medium traybake tin.
  2. In a large bowl, mix together the flour, cocoa powder, sugar, baking powder, and bicarbonate of soda.
  3. Add the dairy-free milk, vegetable oil, and vanilla extract, then stir until smooth and fully combined.
  4. Fold in the dairy-free chocolate chips if using.
  5. Pour the mixture into the prepared tin and spread it out evenly.
  6. Bake for 22–25 minutes, or until the traybake is risen and a skewer inserted into the centre comes out clean.
  7. Leave to cool in the tin before slicing into squares.

Notes

  • This traybake works well on its own or with a simple dairy-free icing on top.
  • Store in an airtight container for a few days, or freeze in slices for later.
  • Check that your cocoa powder, chocolate chips, and dairy-free milk are suitable for your dietary needs.
